McRib BBQ Sandwich

                  

Ingredients

  • 1 rack of Baby Back Ribs
  • Mike's Spicy or Original BBQ Rub
  • Mike's BBQ Rub Chipotle & Beer BBQ Sauce
  • Mustard or Extra virgin Olive Oil
  • Sliced White onions
  • Sliced Pickles
  • Sandwich Bread roll with sesame seeds
  • Smashburger sauce

INSTRUCTIONS

Step 1 : 

Prep the ribs. Remove the membrane from the ribs as this will make it easier to remove the bones once ribs are cooked. Can be done using a butter knife and a paper towel.

Apply mustard or olive on both sides of ribs and add Mike's original or spicy BBQ Rub. The olive oil or mustard won't affect the taste as it simple is used as a binder for the BBQ rub.

Let them marinate for 20-30 minutes at room temperature or if you want, leave them in the fridge to marinate between 2-4 hours or if you can for 24 hours. 

Step 2 : 

Pre-heat your oven to 275 degrees. Place the ribs meat side up on a sheet pan, cover the ribs in foil and cook for 3 to 4 hours or until the ribs come right off the bone. Check on the ribs half way through to see how they look.

Some ovens are stronger than others so if you want to be sure they are cooked, you can probe the ribs and look for an internal temperature between 195-205 degrees.

In the last 30 minutes of cooking, add Mike's BBQ Rub Chipotle & Beer BBQ sauce on both sides of the ribs and put them back in the oven uncovered for the remaining 30 minutes.

Another option is to add your BBQ sauce at the end once they are cooked and then broil them for 2-3 minutes on the bottom rack. This way will get them extra caramelized. Both options work well.

Now it's time to assemble your Mcrib sandwich.  1 full rack ribs can make 2 sandwiches. Split the ribs in half and remove the bones from the ribs. They should be falling apart so this step will be very easy and now we assemble it.

  • Lay ribs on bread.
  • Top the ribs with pieces of the your white onions & pickles.
  • Add Mike's BBQ Rub Chipotle & Beer BBQ sauce & Smashburger sauce.
