Ingredients
- 1 white Onion diced
- 1 Yellow bell pepper
- 4 garlic cloves minced or cut finely
- 2 lbs Beef
- 1 can of Beer
- 1 can 28oz crushed tomato with juices
- 1 can 28oz diced tomatoes with juices
- 1 can of corn
- 1 can 15-18oz black beans drained
- 1 can 15-18oz red beans drained
- 2 diced Jalapenos ( leave with seeds for extra spicy)
- Mike's Original BBQ Rub
- Shredded Cheese of your choice
- Sour cream
- Green Onion
- Olive Oil or Vegetable Oil
Instructions
1. Add 2-3 tablespoons olive oil to a large skillet then add in the white onions & yellow bell pepper and cook on medium heat until the onions are soft. Should take 5-10 minutes.
2. Add the garlic and 2 tablespoons of Mike's Original BBQ Rub and mix all together and cook for about 1-2 minutes until garlic is fragrant.
3. Add the ground meat and add 2-3 more tablespoons of Mike's Original BBQ Rub to the meat. A good trick I use to make sure the meat is fully coated in dry rub is with these 2 steps: First step, add meat to the pan, spread it apart with a wooden spoon & apply a coating of rub all over the meat & mix well. Second step, continue to mix and turn the meat in the pan and then add another coating of rub and mix everything together again and cook until the meat is brown.
4. Transfer the pan with the meat, onions,pepper & garlic and it's juices to your crockpot/slow Cooker and add in the Beer, Tomato cans, red & black beans, corn & diced up jalapenos. Set your crockpot to cook on either 6 or 8 hours.
5. Serve with a topping of sour cream, Shredded cheese of your choice & green onion and enjoy! Bonus points: Serve with Cornbread :) !
Notes for this recipe :
- The original rub can be replaced with our spicy rub.
- For step 4, When transfering the pan to the crockpot, you don't need to add all the juices from the pan but you can keep a good portion of it.
- The chili can easily be frozen!
